Tusk is fished all year round in Norway. Often it is caught in the Atlantic Ocean and the deep fjords along Norway's coast. Due to the conditions in the fjords, dried salted tusk can resemble the taste of lobster. This is a leaner product than dried salted cod or saithe. Tusk is delivered in these sizes:
